Meal Planning & Sales 10/17-10/23

The Fort Collins Sunflower is officially a Sprouts now, so I’ll combine those two sales from now on.

As always these are sales for the Northern Colorado area.  Lots of stores run national sales though, so except for meat and milk everything else usually sticks.  If you’re curious about your store simply click below on the store name and enter your zip code for your own circular.

My Meal Plan:

  1.  Butternut Squash Yellow Curry Soup — a blend of onions, garlic and butternut squash sauteed up and simmered in chicken stock lend this squash some serious flavor.  I kick it up a notch with a little cayenne and some yellow curry.  Tummy warming, but great on the waistline.
  2. Quick/Fake Chicken Parmesan — by butterflying chicken breasts they are not only more tender but less likely to dry out.  I dip them in some egg and then bread crumbs before cooking them off.  Top with jar marinara and you’ve got a fancy meal on the cheap and easy.
  3. Pork Roast — I’m not sure which way I want to go with this, but I’m thinking if I can get some fennel of simmering it away in a crock pot in a light tomato sauce.

I wanted to take a quick moment to apologize for my infrequency recently.  Maybe it’s the autumn air.  Maybe it’s the 16 hour days.  Sorry if your shopping has been effected!
