My Meal Plan:

  1.  Pot Roast — I keep my freezer organized by bin and I have a pot roast that just won’t fit!  I’ll do this in the southern way with a heavy rich gravy made by beef stock, red wine, mushroom soup and lots of onions. Hello, slow cooker.
  2. Rotisserie Chicken — we have a grill attachment that grills a rotisserie chicken, but I’ve done the same thing with the “beer can method” and it works GREAT!  Keeps the heat outside, super crispy and delicious.  Heck, and cheap.
  3. Red Beans and Rice — this is a staple in our house.  It’s seared chicken breasts nestled into a mixture of rice, red beans, kielbasa and peppers.  Makes great leftovers and only uses one pan!  I’ll definitely do a post on this one.
